Hello beauties! I'm Jessica and I blog over at creative index. I am so honored that Lauren asked me to share a little bit about my wedding! It was so fun going through our pictures again and reliving our big day!

My husband and I were married almost two years ago on August 7, 2009. It was the happiest day of our lives and we were honored to be surrounded by our nearest and dearest family and friends!

To all future brides out there who want a little advice... just ENJOY the day. The day goes by so fast and is pretty much a blur. Don’t stress about things going wrong. When you look back on your special day later on, you'll want to remember the happy memories.

monday munchies. - strawberry delight.

This is definitely one of my favorite times of the year! The weather is perfect - not too hot, not too cold. And the produce ... the best! 
Now I love root veggies, but after a winter full of them I'm ready for some juicy fruits! :) 
And strawberries are one of my faves!

So this week's monday munchies is dedicated to those perfect red berries!

Strawberry Chocolate Chip bread


Ingredients:
2 cups fresh strawberries, divided
3/4 cup white sugar
1-1/2 cups all purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup vegetable oil
2 eggs, beaten
1/2 teaspoon vanilla extract
1/2 cup semi sweet chocolate chips
    Directions:

    ~ Preheat oven to 350 degrees F. Grease bottom and sides of a 9 x 5-inch loaf pan; dust with flour, tapping out excess.
    ~Puree 1 cup of strawberries in a blender. Transfer to a medium bowl. Slice remaining 1 cup of strawberries and place in the medium bowl with the strawberry puree. Sprinkle with 3/4 cup sugar; set aside.
    ~In a large bowl, whisk together flour, cinnamon, salt and baking soda. Add oil, eggs and vanilla extract to the strawberry mixture, stir to combine. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Fold in chocolate chips. Scrape batter into prepared loaf pan and smooth surface with a rubber spatula.
    ~Bake until top is golden and toothpick inserted into center comes out clean, about 45 to 50 minutes.  Let cool in pan on wire rack for 10 minutes. Turn out onto the wire rack, and cool completely.{via}



      Strawberry & Avocado Salsa

      Ingredients:
      • 1 cup finely chopped strawberries
      • 1/4 cup finely chopped peeled avocado
      • 2 tablespoons finely chopped red onion
      • 2 tablespoons chopped fresh cilantro
      • 1/2 teaspoon grated lime rind
      • 2 tablespoons fresh lime juice
      • 2 teaspoons finely chopped seeded jalapeƱo pepper
      • 1/4 teaspoon sugar
      Directions:

      • 1. Combine all ingredients in a medium bowl; toss gently. Serve immediately.{via}


      Strawberry Layer Cake
      Ingredients:

      Cake:

      1 1/4 cups sliced strawberries
      10 ounce all-purpose flour (about 2 1/4 cups)
      2 1/4 teaspoons baking powder
      1/8 teaspoon salt
      1 1/2 cups granulated sugar
      1/2 cup butter, softened
      large eggs
      large egg whites
      1 cup low-fat buttermilk
      1/4 teaspoon red food coloring
      Cooking spray
      Frosting:
      1/3 cup (3 ounces) 1/3-less-fat cream cheese
      1/3 cup butter, softened
      2 tablespoons Grand Marnier (orange-flavored liqueur)
      3 cups powdered sugar
      12 whole strawberries (optional)

      • Directions:
        • 1. Preheat oven to 350°.
        • 2. To prepare cake, place sliced strawberries in a food processor; process until smooth.
        • 3. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt, stirring with a whisk. Place granulated sugar and 1/2 cup butter in a large bowl; beat with a mixer at medium speed until well blended. Add eggs, one at a time, beating well after each addition. Beat in egg whites. Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture. Add pureed strawberries and food coloring; beat just until blended.
        • 4. Divide batter between 2 (8-inch) round cake pans coated with cooking spray. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on a wire rack for 10 minutes. Remove from pans; cool completely on wire racks.
        • 5. To prepare frosting, place cream cheese, 1/3 cup butter, and liqueur in a medium bowl; beat with a mixer at medium speed until blended. Gradually add powdered sugar, and beat just until blended.
        • 6. Place 1 cake layer on a plate; spread with 1/2 cup frosting. Top with remaining cake layer. Spread remaining frosting over top and sides of cake. Cut 1 whole strawberry into thin slices, cutting to, but not through, the stem end. Fan strawberry on top of cake just before serving, if desired. Cut remaining 11 strawberries in half. Garnish cake with strawberry halves, if desired.{via}

      perfect pizza.

      I'm going to let y'all in on a little secret, since we're besties and all. 

      I LOVE pizza. 
      like obsessed. 
      could eat it everyday. 
      for almost every meal. 
      {after all, sometimes a girl needs cereal in the morning} 

      As I was looking for a tasty pizza recipe for B and I to make last night, I found this heavenly number. 

      Nectarine & Prosciutto Pizza

      • Ingredients
      • 3/4 cup shredded provolone cheese
      • 1/4 cup crumbled blue cheese
      • Yellow cornmeal for dusting
      • 1 pound whole-wheat pizza dough
      • 3 tablespoons prepared basil pesto
      • 1/2 cup thinly sliced prosciutto
      • 1 large ripe nectarine or peach or 2 fresh apricots, pitted and thinly sliced
      • 1 tablespoon aged balsamic vinegar
      • 1/4 teaspoon freshly ground pepper

      • Directions
        1. Preheat grill to low.
        2. Mix provolone and blue cheese in a medium bowl; set aside.
        3. Sprinkle cornmeal onto a pizza peel or large baking sheet. When you’re ready to get your pizzas on the grill, turn the dough out onto a lightly floured surface. Dust the top with flour; dimple with your fingertips to shape into a thick, flattened circle"don’t worry if it’s not perfectly symmetrical. Then use a rolling pin to roll into a circle about 14 inches in diameter. Transfer the dough to the prepared peel or baking sheet, making sure the underside of the dough is completely coated with cornmeal.
        4. Slide the crust onto the grill rack; close the lid. Cook until lightly browned, 3 to 4 minutes.
        5. Using a large spatula, flip the crust. Spread pesto on the crust, leaving a 1-inch border. Quickly sprinkle three-fourths of the cheese mixture on top. Top with prosciutto, fruit and the remaining cheese.
        6. Close the lid again and grill until the cheese has melted and the bottom of the crust has browned, about 8 minutes.
        7. Drizzle balsamic vinegar over the pizza and season with pepper just before slicing and serving. {via} 

      And y'all it was DIVINE. A must try. We paired it with a simple spinach salad and some white wine.

      Off to the beach!

      Can y'all believe it's Friday?! 
      fastest.week.ever. 

      Which leads me to my next point ... I think EVERY weekend should be 3 days. 
      Don't you agree? 

      B and I are heading to the beach AGAIN this evening and I couldn't be more excited! It's just the 3 of us {obvi Tux has to come too!} and I'm super excited for a low-key weekend! 

      Tonight it's a casual dinner on the porch of the house ... Overlooking the marsh. {swoon} 

      But tomorrow we're going out to a nice dinner. 

      And this is what I'd LOVE to be wearing ... 
      Did you see that Whiting & Davis bag?! {av's} doing a giveaway for a FAB bag OF YOUR CHOICE from this company. And even though it definitely lessens my chances ... You should DEF sign up! :)

      thread cravings. - swim edition.

      I have a confession y'all ... I am a TRUE beach bum. In my humble opinion, there is NOTHING better than sitting on the beach - toes in the sand, book in my hand, soaking up some rays. 
      I could literally do it all day everyday. 

      Now we are REALLY lucky to live close to the beach and even more lucky that we have friends and family who are MORE than willing to share their beach homes with us! 

      Me and the Mr. {and of course the pup} are heading to the beach again this weekend and I couldn't be more excited! 

      Also inspired me to create my latest thread craving board. 
      Today it's ALL about swimsuits and coverups.

      Personally I almost always wear a bikini with a bandeau top ... there is NOTHING that drives me more crazy than having tan lines from a halter. Now that being said, I do SOMETIMES wear a halter! And recently have really been lusting after some one pieces I've seen! 

      As for coverups, I LOVE wearing a romper! {shocking, I know. I'm obsessed.} They're just so easy! 

      So what's your bathing suit preference?!
